Downslope Single Malt Whiskey is made from 95% maris otter floor malted barley and 5% Scottish peated barley. The spirit is first distilled in the manner of a Scotch in a custom-made double diamond pot still. A unique maturation process follows developed specifically for the ‘high and dry’ Colorado climate. The spirit is quadrupled casked, aged in both new and used American white oak, experienced wine barrels, and finished in a Cognac barrel solara style. Solara aging combines whiskey of different ages in the same barrel. In any given barrel the whiskey age ranges from 18 months to 5 years. It rests there until the distiller deems the whiskey ready. Look for a cereal sweetness and a for a red stone fruit aroma, a result of the malted barley and cognac barrel finish. Scotch smokiness on the exhale from the peated barely and a lingering oak finish.
