This whiskey was produced in collaboration with Purgatory Wine Cellars in Parker, CO. Purgatory made an American cherry dessert wine which was fortified with brandy made by Downslope Distilling. The "cherry port" style wine was then aged in Downslope Distilling American Single Malt Casks. The Casks were then returned to Downslope after being freshly emptied and then re-filled with our American Single Malt Whiskey.
Downslope Single Malt Whiskey is made from 100% malted barley, a third of which is 50 ppm Scottish peat smoked barley. The spirit is first distilled in the manner of a Scotch in a custom-made double diamond pot still. A unique maturation process follows developed specifically for the ‘high and dry’ Colorado climate. The spirit is aged in both new and used 30-gallon American white oak and finished in port barrels solera style. Solera aging combines whiskey of different ages in the same barrel. It rests there until the distiller deems the whiskey ready. Look for a cereal sweetness and a for a red stone fruit aroma, a result of the malted barley and port barrel finish. Scotch smokiness on the exhale from the peated barley and a lingering oak finish.
